Also referred to as gluconolactone or GDL, glucono delta lactone is a food additive that performs a number of different functions in prepared foods and supplements. It can be used as a protein coagulant, acidifier, expander, preservative, or chelating agent. A ‘chelating agent’ is simply a compound that helps combine elements to actuate cleaning (in WildClean’s case, the powders).
